Given the stickiness/chewiness/softness/crispness of what is being cut, one would think a knife’s edge would leave the edges a little jagged or crumbled.

Emerson’s Mehdi Taki shares the secrets in a Kennedy’s Confection article, Cutting Solution Offers Accurate Portion Control and Reduced Waste.

Mehdi highlights the challenges with traditional mechanical cutting technology:

Variability in bar thickness.

Variability in ingredients being cut (hard, soft, chewy, sticky).

Multilayered bar compositions, some of which may be more vulnerable to crushing than others.

Hard or crisp ingredients, which are prone to cracking or crumbling instead of cutting cleanly.

Also, production may be delayed to periodically stop the line to clean the knife. He describes an alternative approach in using ultrasonic cutting technology.

Branson ultrasonic cutting technology provides:

…virtually frictionless cutting and portioning of nearly any confectionery item — from firm, soft or frozen items, to cakes and bakery products, to fudge, candies and protein bars.

Ultrasonics eliminates consumables, delivers faster speeds, reduces scrap, and lowers energy consumption using high-frequency vibrating blades to prevent sticking to food, rubber, or plastic films, extending tooling wear life.

These ultrasonic cutting devices consist of a power supply that converts 50 or 60Hz electrical voltage into 20, 30, or 40kHz frequencies depending on what the application requires. An electromechanical converter converts these high frequencies into mechanical vibrations used in the cutting process. A booster controls the range of motion for the cutting horn. And, the cutting horn performs the actual cutting.

The cutting system allows:

…the cutting horn to gently displace product on either side, enabling clean and precise cuts through sticky foods like caramel or licorice, delicate foods like bread or angel food cake, crusty or nutty foods like bagels or protein bars, and even frozen pizzas or prepared foods.

These displacement cuts:

…precisely separate portions without wasting product and creating crumbs or residue. Because the ultrasonic portioning process minimises surface friction, it can sustain high cutting rates and long blade life.

These high-speed vibrations also prevent:

…the accumulation of crumbs or sticky residues on the cutting horn surface, so release agents are not needed.

Read the article for more about the advantages of ultrasonic cutting technology for food and non-food applications. It wasn’t that long ago when adding some peripheral device to a computer called for fiddling with drivers and configuration, whereas today many devices are plug and play. The same also happens with industrial equipment, and we can use Micro Motion Coriolis mass flow meters as an example.

Coriolis flow meters have some very strategic and unique capabilities that make them ideal for a variety of complex measurement applications, but taking advantage of all these features can be challenging. Emerson has worked to ease these issues, as explained in this recent article in Chemical Engineering, Coriolis Flowmeters: Insights for Selection and Upgrade.

Coriolis meters are one of the few flow meter types that can directly measure the mass flow of either gases, liquids, or slurries. They also simultaneously directly measure density and temperature, providing three vitally important measurements within a single meter. Most importantly, the mass-flow measurement remains accurate despite process variation, allowing production units to consistently close the loop on process mass balances and optimize production.

These capabilities are all needed, and even more features are now available. For starters, the range of sensor designs has increased to reduce size, and to support specialized application and configuration options. A great option for chemical manufacturers is the recently released Micro Motion G-Series Coriolis Flow and Density Meter (hyperlink to G PDP), an ultracompact and lightweight solution offering simple installation and integration. Additionally, a range of Micro Motion Coriolis sensors is available with characteristics that cater to different needs and applications. Micro Motion Flow Meters | Emerson US

Transmitters also have new, valuable options for the chemical industry. For instance, the Micro Motion 4700 Coriolis Transmitter offers a compact C1D1 (Zone 1) housing, scalability from 1-3 output channels, Bluetooth® Technology, and retrofitting to existing Micro Motion sensors.

The article goes into more detail on Coriolis additional new features, but a chat with one of our application engineers will be very informative.

If faced with the need to specify a new Coriolis flow meter or upgrade an existing sensor, users should fully understand the assortment of sensor and transmitter options that have recently become available. Coriolis meters have always been a premier flow-measurement device, but the latest technological advances make these meters even more capable and affordable.

Beam Institute at the University of Kentucky is a training facility for students and researchers looking to learn more about the bourbon industry. To support students and researchers in their learning, JCS Process & Control Systems, a builder of specialized food and beverage processing machinery, donated its JCS UltraBlend™ Continuous In-line Standardizer. The technology is designed to work with two main blending components, mixing them together to provide an output stream with desired proportions, plus additional make-up water as necessary. The system’s ability to measure the density of the components and final blend ensures an on-spec final product. The system incorporates numerous Emerson instruments, including two Micro Motion Coriolis Mass Flow and Density Meters, two Rosemount Level Transmitters, two Rosemount Pressure Transmitters, and two Rosemount Temperature Sensors. Since JCS wanted to make this a donation to the school, Emerson provided all its instruments at no cost, sharing in the contribution. This donation will enable both students and industry professionals the opportunity to perform pilot testing and research in an academic laboratory environment. The JCS UltraBlend™ is the first system with approval from TTB to continuously blend alcohol to a bottling filler without the use of a bottling tank for proof verification/correction. This technology provides very tight control, achieving tolerances of blending high-proof spirits to +/- .03 ABV or better.

“JCS is thrilled to be able to coordinate the donation of this system with our component partners, for the advancement of research in the bourbon industry,” said David Stoklosa, VP of Sales and Marketing at JCS. “We look forward to seeing students and manufacturing professionals in the industry take advantage of the productivity and time savings advantages this system provides in comparison to traditional batching”.

“This equipment will enhance our ability to immerse our students in the ongoing modernization of the distilled spirits industry,” said Brad Berron, Beam Institute research director. “This gift significantly extends our ability to conduct impactful research aimed at increasing productivity and efficiency industrywide. Students from across UK’s campus will be trained by our faculty experts on these new technologies and their integration into traditional bourbon production processes. And since time is the enemy of a successful production season it’s also why it’s so important to have clear visibility to all remotely located assets in the field, over countries, and across oceans. Knowing exactly what is or is not happening in the field can be from literally – anywhere and at any time can make or break your season.

Imagine being able to monitor your critical machines from anywhere in the world, even from four countries and two oceans away. This level of access could be the key to maintaining your profit margins and saving your season. The right technology can provide this level of control and insight.

But getting started can seem overwhelming and even impossible when thinking of all the other, far more pressing issues you deal with day-to-day just to keep things going. You have lots of ‘fires’ to put out every day, and although you realize the right tech in place could, of course, help with all that, just finding the time to investigate your digital options doesn’t exactly feel like an option. Instead, it gets quickly put on your back burner for some other time; maybe next off-season when you can catch up on all the other lists of things to do you always have rolling, or maybe not.

>When you do make the time, probably the most important factor to consider is the partner you choose to work with; sure, you need the latest and greatest technology to be able to grow into the future company you are dreaming about becoming, and of course, you need to have all the most secure measures in place for your data, and you also need to be sure all that data is able to be utilized because you of all people certainly know too much data doesn’t really mean anything at all if the right people, in the right roles, aren’t getting only what they need to make faster, more accurate and stronger business decisions; Afterall, that is the whole point of technology – to enable your people to help you, while spending less, producing more and setting your company up for years of sustainable growth.
